Weekend cupcakes

I'm a incurable sweet tooth. Love sweet treats and this weekend I decided to bake some cupcakes. I got a recipe that I like very much, it's very simple and leaves me with ten medium sized cupcakes in half an hour. The recipe is also very versatile, it's possible to do any variety you like, chocolate, vanilla, lemon, spicy and so on. This weekend I chose to make some with milk chocolate.



Milk Chocolate Cupcakes Recipe (10 medium cupcakes)

100g margarine
100g milk chocolate
2 eggs
100g sugar
100g flour
1 ts baking soda

1. Preheat oven to 180C and line a cupcake tray with paper cases

2. Melt margarine and chocolate.

3. Whisk lightly together eggs and sugar.

4. Add the melted mixture to the eggs and sugar.

5. Sift in flour and baking soda, beat it until it's an even batter.

6. Fill the paper cases halfway up using two tablespoons.

7. Bake the cupcakes for about 15 minutes, until they are firm and golden.

8. Let them cool down. Enjoy!


Optional Cinnamon Cream Cheese Icing
Optional because not everyone like the sweet on top. But I do! This cinnamon icing is especially good with the milk chocolate cupcakes.

1 pk Philadelphia natural
100 ml icing sugar
1/2 ts cinnamon
A couple of drops vanilla

Mix it all together until smooth. Spread with a spoon, small spatula or piping bag.


The combination  milk chocolate cupcake and cinnamon icing is one of my favourites, it's delicious.
